How to follow a healthy celiac diet

How to follow a healthy celiac diet Feeding the person with celiac disease requires special conditions to ensure that it is safe and, at the same time, complete.

The first thing is to be clear about what we are talking about, gluten is a group of proteins that are present in some cereals, especially wheat. The latter is related to other grain cereals such as rye, barley and oats, because these grains also have some gluten in their composition.

Celiac disease is a chronic autoimmune and systemic disorder caused by a permanent intolerance to gluten that affects individuals with a genetic predisposition. It is important to be clear that celiac disease has no "cure", its only solution is to maintain a gluten-free diet throughout life.

For this reason, and because of the International Celiac Day that is celebrated this weekend, we want to share with you some practical advice to achieve it. A gluten-free diet should not be started without having been previously diagnosed with celiac disease.

Once the diagnosis has been made, any product that contains wheat, oats, barley, rye, and / or products derived from them, should be eliminated from the diet. It is important to follow a varied, complete and healthy diet, for this, it is best to prioritize natural and fresh foods, such as meat, fish, eggs, dairy, fruits, vegetables, legumes and cereals such as corn or rice . Learn to read labels to easily discover what foods you can safely eat.

The order and cleanliness in the kitchen is basic, especially if it is shared by people with celiac disease and people who are not. In these cases it is best to reserve a space in the kitchen for gluten-free foods, as well as your own kitchen tools for their preparation, in this way we will avoid cross contamination. Make gluten-free dishes before those with gluten, and never do it together. When preparing, keep in mind that the elements used can also affect food contamination, so gluten-free foods should always be fried with clean oil and the dishes should be protected in the oven and microwave.

Education and communication. This is especially important if they are dealing with children with celiac disease, since it is important that they know the products they can and cannot consume and why. In restaurants, we must be careful with what we consume, fortunately, allergens appear in most of the menus. It is best to speak directly with the waiter to discuss with him what dishes you can consume based on their products and preparation.

We hope that these tips will be useful to you to maintain a gluten-free, healthy and complete diet in a simple way.

And remember, at we are there for whatever you need.
